Wheat berry Yellow Squash Salad
This is a delicious, hearty, and healthy salad! So easy as well!
2 cups of greens (I used a mix of kale, spinach, and swiss chard)
1 yellow zucchini/squash, diced
1 garlic clove, chopped
1/4 onion, chopped
1/4 avocado, chopped
1/4 cup wheatberries, cooked
a little soy sauce
Cook wheatberries according to package (I brought 1/4 cup of wheatberries and 3/4 cup water to a boil, covered and simmered for 10-15 minutes).
Set aside and let cool.
Heat about a tablespoon of olive oil in a pan. Add onion and squash and sautee. Add chopped garlic and sautee a bit longer. Set aside and cool.
Assemble the salad: Mix greens, cooked veggies, cooked wheatberise, and chopped avocado. I added a splash of soy sauce as salad dressing… VIOLA!
Wheatberries are a wonderful source of fiber and protein. Avocado–wonderful source of fat. This is a fiber-rich salad to keep you full and satisfied.
