WOW. This is the first time I’ve ever made a frittata. And it was BOMB.
You can obviously add whatever you want to make it your own. It’s a perfect way to use up fresh produce in your fridge before it goes bad. Throw it all in. Get creative!
2 tsp olive oil
1 cup fresh spinach
1 clove garlic, chopped
1/3 onion, chopped
6 orange cherry tomatoes, diced
2 tbsp corn
1/4 avocado, chopped
5 egg whites
1/4 cup shredded cheese (I used a Mexican blend)
2 tbsp grated parmasean cheese
salt and pepper, to taste
Sautee veggies in an oven-safe pan in 2 tsp of olive oil (I added the tomato and avocado after the onions were done the way I like them). In a separate bowl mix egg, cheeses, salt, and pepper together. Once the veggies are cooked through, add egg mixture. After you pour the egg mixture on top of the vegetables, make sure the eggs get underneath the veggies also so the frittata comes out uniform.
Cook on low-medium heat for a few minutes until the bottom sets and the top starts to set. Pop it in the oven on broil for a few minutes until the top is cooked to your liking. Use a rubber spatula to get out of the pan.
I topped mine with some chopped scallion and sriracha!
Eat it all up. But I’m sure I didn’t have to tell you that part! :)
