Veggie Egg White Quinoa Scramble
This nomalicious breakfast is a wonderful source of protein (egg and quinoa), carbohydrates (quinoa), fiber and essential vitamins/minerals (quinoa, vegetables), and fat (olive oil and avocado). If you don’t enjoy your veggies, I feel sorry for you (because I’m obsessed!). But, if you have a hard time getting your veggies in, throw them in a scramble!
1/2 tbsp olive oil
1 small onion (chopped)
1 clove garlic (chopped)
1/2 jalapeno pepper (seeded and chopped)
3/4 cup kale (chopped)
1/4 cup quinoa (cooked)
3 egg whites, 1 egg (separated)
Heat olive oil in a non-stick skillet. Add chopped onion and cook for a few minutes. Add garlic, jalapeno, and kale. Cook for a few minutes, mixing frequently. Add quinoa, mix further. Turn heat down, add egg whites and cook together. Season with salt and pepper, to taste. Meanwhile, heat a smaller skillet in a little olive oil (just to prevent sticking). Add a full egg and cook over easy. Place egg on top of scramble, add avocado. I seasoned with a little more salt and pepper.
