Spicy Shrimp over Sauteed Shrimp and Mushrooms
Shrimp (I used 7 jumbo shrimp)
1 cup fresh spinach
1/4 onion (sliced)
1 cup sliced mushrooms
1 clove garlic (roughly chopped)
Seasoning: 1/2 tsp white pepper, 1/2 tsp salt, 1 tsp cumin, 1/2 tsp turmeric, 1/2-1 tsp garlic powder, 1/2 tsp cayenne pepper
-Defrost shrimp. Dry on paper towel. Place all seasonings into a small bowl and mix. Sprinkle the mixture on each side of the shrimp. I used my hands and coated them well.
-Use two different pans.
In pan #1: heat a little olive oil. Add shrimp (lay all on one side). Cook for about 3 minutes. Flip the shrimp, cook for another 3 minutes. Cook until throughly cooked. I used a regular pan (not non-stick) so i could get a little browning on the my shrimp.
***SIMULTANEOUSLY, COOK THE VEGGIES IN ANOTHER PAN:
In the other pan, heat some olive oil (about 2 tsp). Cook onions for a few minutes. Add mushrooms and garlic. Cook for a few more minutes. Add spinach. Season with a little salt and pepper. Cook until veggies are done.
Plate it pretty: Transfer cooked veggies onto a plate. Top with cooked shrimp. Season with a piece of lemon. And nom that all up.
