Spaghetti Squash and Turkey Bolongese
This recipe is so delicious and healthy! It is a low-carb option in place of actual spaghetti. The lean ground turkey meat is a wonderful source of low-fat protein and makes for a delicious meat sauce!
2 tbsp olive oil, divided
1 onion, chopped
1 bell pepper, chopped
2-3 cloves garlic, chopped
1 pound ground turkey
1 tbsp red pepper flakes (omit if you don’t like the spice)
1 tbsp Italian seasoning
salt and pepper
1 can tomatoes, crushed
1 jar tomato sauce
1 spaghetti squash
fresh basil, chopped
shredded cheese (I used a mixture of several kinds)
Spaghetti squash: Cut spaghetti squash in half. Remove seeds. Spray a little olive oil on to both halves. Put onto a tray/oven dish with the flat halves facing down. Bake @ 350 for about 30 minutes.
In a saucepan, heat olive oil. Add garlic, onion, and peppers. Cook for about five minutes. Remove cooked veggies from pan. In the same pan, heat another tbsp olive oil and add ground turkey. Add seasonings. Cook until brown. Add veggies back into pan. Add tomatoes and tomato sauce. Cover pot and bring to a simmer.
Once your spaghetti squash is done cooking, use a fork to remove the meat of the squash. It should look like spaghetti! Put in a bowl, top with the meat sauce, top with fresh basil and shredded cheese.
