Pumpkin Protein Pancakes
FOUR INGREDIENTS. Need I say more? Okay, fine. LESS THAN 250 calories for the entire recipe! I think I got you now?
High in protein, natural sugars, and delicious.
1 mashed banana
1/4 cup pumpkin puree
2 egg whites (or one whole egg)
3 tbsp whey protein (can sub with almond meal)
*Can add a tsp or 2 of truvia if you’d like it sweeter. The sweetness really depends on the banana and how ripe it is.
**Optional: add chocolate chips, blueberries, cinnamon, pumpkin pie spice, coconut flakes, etc! Get creative!
Topping: I used sugar-free maple syrup and a little (dairy-free) whipped cream.
Peel banana, place in bowl. Microwave for 20 seconds just to make it easier to mash. Mash banana. Add pumpkin, egg, and whey protein. Mix together.
Heat non-stick skillet/pan. Add coconut oil to grease the pan. Pour batter on (I made about 6-8 “silver dollar” babies) and flip when ready…. I’m sure you all know how to cook pancakes at this point.
