Mixed Fruit Chia Seed Baked Oatmeal

I ran out of eggs and wanted to make baked oatmeal. I created a chia seed mixture to replace the binding property of eggs. I also used applesauce, banana, and blueberries as the natural sugars. So, no added sugar for you kids. Keep it healthy. Chia seeds are an excellent source of protein, iron, fiber, and calcium!

Chia Seed Mixture:

1 tbsp Chia seeds (crushed/muddled)

3 tbsp water

Mix chia and water together. It would have probably made more sense to crush the chia seeds before adding the water, but I didn’t. Instead, I mixed the two, and the muddled it with a muddler (bar tool from my previous life as a bartender). Let it sit for a few minutes. The textures becomes thick and goopy as the seeds absorb the liquid. This chia seed mixture makes two servings of the baked oatmeal described below:

Mixed Fruit Chia Seed Baked Oatmeal:

Ingredients:

2 tbsp sugar-free maple syrup

½ the chia seed mixture (mentioned above)

½ banana, cut up into small pieces

¼ cup applesauce

2 tsp truvia

½ cup rolled oats

¼ tsp baking powder

¼ cup blueberries (I used frozen)

½ cup almond milk (I used reduced sugar)

1 tbsp coconut flakes

1 tbsp nut butter

 

Directions:

Mix maple syrup, chia seed mixture, banana, and applesauce together. Add and mix truvia, baking powder, and rolled oats. Add milk and blueberries. Transfer mixture to an oven-safe ramekin sprayed with a little coconut oil. Top the mixture with coconut flakes. Bake at 350 for about 25 minutes. Add nut butter on top.

BOOM.
