Creamy Berry Baked Oatmeal
If you've taken a look through my recipes, you'll see that I've made several variations of baked oatmeal. I was craving some baked oats this morning, but didn't have any ripe bananas on hand. I improvised and came up with this delicious recipe! The cottage cheese adds a creamy richness, giving it a moist and rich texture!
Baked oatmeal is a wonderful source of complex carbohydrates. This recipe, in particular, provides a wonderful source of protein, to keep you full for hours!
This is also a wonderful pre-workout meal! My only suggestion is to give yourself at least 1.5-2 hours to digest it before moving!
4 oz. apple sauce
2 egg whites
1/8 cup whipped cottage cheese (I buy it like this, but if you have regular cottage cheese, blend it)
2 tbsp maple syrup (I use sugar-free)
2 tsp stevia
1/2 cup rolled oats (DO NOT use quick oats)
1/4 tsp baking powder
1/4 cup fresh blueberries (or any berry; can be frozen also!)
1 tbsp coconut flakes (topping)
Preheat oven to 365*F. In a mixing bowl, whip egg whites. Add apple sauce, cottage cheese, maple syrup, and stevia. Mix together well. Next, add the oats and stir together. Add the baking powder and make sure its mixed evenly throughout. Fold the berries into the mixture.
Spray a baking dish/ramekin with some coconut oil or other non-stick spray. Add the mixture into the ramekin. Place the coconut flakes evenly along the top of the mixture. Bake for about 20-25 minutes or until the top is slightly brown. Another way to check, is to carefully touch the top of it. If its still mushy, it needs more time. If its firm but soft, its ready. To get a crispier top, add under the broil for 30 seconds! Make sure you don't burn it!
