Banana Blueberry Baked Oatmeal
This is my GO-TO baked oatmeal. If I don’t have a ripe banana, I’ll substitute the 1/2 banana for 1/4 cup of applesauce. Also, I used coconut flakes for the topping but you can also use coconut flour.
I topped this baby with some organic peanut butter for some extra protein. This was an excellent post-workout meal and keeps your full for hours! A wonderful source of complex carbs to refuel your body’s hard work! BOOM.
Ingredients:
1/2 ripe banana, mashed
2 tbsp maple syrup (I use sugar-free)
1 egg white
2 tsp truvia
1/2 cup rolled oats
1/4 tsp baking powder
1/4 cup blueberries (fresh or frozen)
1 tbsp coconut flakes
Directions:
Mix banana, egg white, maple syrup, and truvia together. Add oats and baking powder and stir together. Stir in blueberries. Spray a small baking dish/ramekin with some coconut oil. Add mixture. Top with coconut flakes. Bake at 375 for about 20-25 minutes. Broil the top if you’d like a little brown crisp.
Top with a little nut butter, if you’d like!
