These fries are a healthy alternative to french fries. They are delicious too! Makes for a great side dish to accompany any meal. I used them as a dipper for my garlicky bean dip!
Pictured here is also my homemade baked tortilla chips!
Yields about 2 servings
1 bunch of asparagus
Olive oil spray
Salt, to taste
Preheat oven at 400F. Wash asparagus. Cut the stalks in half twice; once width-wise and once length-wise. [I cut them length-wise to make them skinny so that they crisp up well. This is a tedious process so if you prefer to keep the stalks whole, just increase cooking time!] Lay asparagus pieces on a baking sheet and spray with olive oil. Sprinkle with some salt. Bake for about 15-20 minutes, turning them a couple times. Once crispy, remove from oven. I also like to stick them under the broiler for a minute to char them a bit!
