Apple Blueberry Baked Oatmeal
A healthy and delicious breakfast to keep you full for hours!
1/4 cup applesauce
1 egg white
2 tbsp maple syrup (I use sugar-free)
1/2 cup oats (NOT quick oats…use regular rolled oats)
1/4 tsp baking powder
2 tsp stevia/truvia
1/4 cup frozen blueberries
1 tbsp coconut flakes
Topping: PB2 and whipped cream
Preheat oven to 375F.
Mix maple syrup, egg white, and applesauce together. Add oats, baking powder, truvia, and mix together. Add blueberries. Spray a oven-safe ramekin with a little coconut oil (or other oil to prevent stick). Pour contents into ramekin. Top with coconut flakes.
Bake in oven for about 20 minutes. You can put it on broil for another minute or two to get a little crisp on the top.
I topped this baby with PB2 and whipped cream.
